South of the border

It happened again, we were fixing dinner when we realized we didn't have any pictures for today's blog.

"What am I going to take a picture of?" I mused aloud.

"Take a picture of our soup!" was the helpful response from Frederick.

Many of you know that we order soup mixes from King Arthur Flour and fix soup for our dinner.  We are just finishing our second order from KAF - there are 10 different soup mixes.  Our third order was sent to Suzanne's house last week and the two boxes of soup mixes are in the back of the car.  I order 4 each of our favorite soups, 3 each of the mixes that we like a lot, 2 each of the soups that are really good, and one each of the remaining because they are delicious.  Frederick has devised a chart for me to show which soup mix we have in a specific order so that we don't end up having to eat the same soup two times in a row and they are all evenly spaced out.  I looked at the chart and it reminded me of circle seeding at swim meets.

Actually there was this one picture that Frederick took while we were crossing the Hudson River on Castleton on Hudson Bridge. The drive was dreary and rainy and I couldn't face another Rest Stop picture. I was surprised to learn that Massachusetts doesn't provide adequate parking for trucks and RVs.  There is just an open space, and not very big, and the trucks just pull in every which way.

Here's our dinner.  This is one of our two favorite soups - South of the Border Tortilla Soup. The tortilla chips are meant to be a garnish, the suggestion is to crumble the chips into bowls and pour hot soup on them.  We like to eat them as chips.  Those are unsalted almonds in the little bowls and spinach salads with craisins.
